Grains of Paradise
Also known as Guinea Pepper and Melegueta Pepper, Grains of Paradise are small reddish-brown seeds from western Africa. In the era of the Silk Road, Grains of Paradise were sold as a cheaper substitute for black pepper. Their flavor begins with a piney note that reminds us of rosemary and bergamot. But wait for it...then a heat gradually spreads over your mouth. Surprisingly, Grains of Paradise pair very nicely with apples, such as in this tart.
